All About Olive Oil
A Q&A about olive oil and vinegar with Olivette owner, Alina Lawrence
(page 2 of 2)
Do you have a favorite salad dressing recipe that can be made from olive oils and vinegars from Olivette?
We have lots of them! Here are two of our favorites and both are very different!
Olivette Everyday Vinaigrette
1/4 cup Olivette Traditional 18 Dark Balsamic
1/4 cup Olivette Mild EVOO
2 tsp Fallot Honey Balsamic Dijon Mustard
1 tsp Olivette Cherry Wood Smoked Salt
1/2 tsp turbinado or organic cane sugar
1/2 tsp cracked black pepper
Combine balsamic, mustard, salt, sugar and black pepper in a small mixing bowl and whisk until salt and sugar dissolve. Begin to drizzle EVOO slowly into bowl whisking steadily until all the EVOO is incorporated into the vinaigrette and emulsified.
This is a staple at home, and we use it over green salads with lots of fresh herbs like tarragon, parsley and dill.
Olivette Pomegranate-Lime Yogurt Dressing
¼ cup whole milk organic yogurt
3 tbsp Olivette Pomegranate Dark Balsamic
3 tbsp Olivette Persian Lime Fused Olive Oil
1 tbsp fresh lime juice
1 tsp Olivette Sicilian Trapani Sea Salt
1 tsp cracked black pepper
Combine all ingredients in a medium mixing bowl. Whisk until all ingredients are well incorporated and the salt has completely dissolved. Transfer dressing to a re-sealable container and refrigerate 30 minutes before serving.
The products in bold can be purchased at Olivette

What are some of the best uses for some of the different variety of salts that are sold at Olivette, and which is your favorite to use?
Our blended salts with chili peppers or black truffles are great for adding a little spice or an earthy flavor to just about anything. Our Smoked Bacon & Chipotle salt has been known to create addiction. Our Hawaiian sea salts are some of the purest salts on earth, and our rock salts from the Himalayans and Andes are full of minerals and trace elements from an ancient world. However, without a doubt our favorite salt to use for just about everything is our Jurassic Salt from Texas. It’s got a glassy texture. It doesn’t taste as salty as sea salt, and it has a beautiful mineral quality to it that adds a nice pop to just about any dish. It holds up well to high heat too, so it’s great for the grill.
